Salsify: This carrot-like root crop is more gourmet than most realize. It is said to have an oyster-like flavour, and is a neat addition to soups. It’s an old, old food crop dating back to around 1860s. It’s not commonly grown in kitchen gardens today, but that could all change.
Planting Instructions
Grow salsify like parsnips, another root crop that prefers deep, stone-free soil. The seeds take a long time to germinate – up to 21 days – so Plant as early in the spring as the ground can be worked. Loosen soil to a depth of 18 inches. Plant 3 seeds every 6 inches and cover the seeds with ½ inch of soil in rows 12 inches apart. The seeds frequently fail if they are not kept consistently wet until the seedlings are established.
The leaves look a lot like grass, so mark your rows! When the plants are well established, thin seedlings to one plant every 6 inches. Harvest in 16 to 25 weeks, but leave some in the ground overwinter do that you can
